When we can, we use locally sourced ingredients — such as bison, premium graded Alberta and Kobe beef, elk, and cheese produced in Alberta — and work with a widening circle of food suppliers in the province.

Curated by our esteemed Executive Chef Sonny Sung, our menu highlights unique techniques that he has learned over 20 years in the restaurant business, and recipes he has gathered from across the world. 
At Evario, we strive to make each visit unforgettable. With Chef Sung’s guidance, we offer to create a customized dining experience with dishes designed especially for you, to suit your individual mood and preferences on the day of your visit. To top it off, our bar features a connoisseur’s selection of international wines and craft cocktails that will complete your meal. 

We can accommodate any dietary needs, including providing gluten-free, vegetarian, and vegan options. 

Executive Chef Sonny Sung

Distinguished and cookbook author

Over the past two decades, he has succeeded in building his reputation in Canada’s hospitality industry and is recognized as one of the top North America’s prominent chefs. More than once, Sung won a gold at the World Culinary Olympics.

His primary passion is French, Italian, Asian, and innovative cuisine.

Sung studied at the Culinary Institute of America in New York, and has cooked in Italy, France, Germany and Switzerland over the years. In curating his dishes, Sung aims to create something new every time, and to always keep learning. 

He was the executive chef and co-owner at “Claude’s On The River,” which was awarded as one of “The Best 100 Restaurants in Canada”, as well as worked as a Corporate Executive Chef for Sorrentinos Restaurant Group. Sung has been featured as a guest on CTV, Global TV, and Breakfast Television. In 2014, he successfully published a cookbook “Italian with a Twist”, a collection of recipes that combine French, Italian, Asian and Canadian fare. Previously, he also taught at the Department of Culinary Arts and Professional Food Studies at NAIT, where he coached the students on their path to becoming the next generation of chefs. 

Sung is a firm believer that healthy, high-protein, vegetarian and vegan meals are the future — and he incorporates the focus on well-balanced nutrition in designing the menu at Evario. To accommodate the individuals’ tastes and create a memorable dining experience for those who decide to venture beyond the menu, he always welcomes an opportunity to prepare a novel dish with a unique twist that will surprise and delight the guests. With his all-encompassing approach that combines experimentation with intercontinental dishes, using lots of high-quality local ingredients, and his commitment to old school practices that work, Sung brings first-class experience to all of his dinners.
